This recipe sounds pretty gross and weird considering mashed potatoes are pretty easy to make dairy-free or vegan--just use olive oil or Earth Balance and soymilk. If you want to make a dish with a similar consistency that's more nutritious, you could make millet mash, which uses cauliflower and millet, or keep the skins on the potatoes.
I think you've gone too far when you start substituting soy/tofu for vegetables that are already vegan by nature.
I'm not sure why people are so grossed out by mayo. Is it the high fat content? Buy low fat. Is it the taste? Is it that people don't understand what mayo actually is? I had a recent conversation with someone who thought mayo had dairy in it! Stick to Best Foods/Hellmans products, as some other brands are nasty tasting (like Trader Joe's).
