Tip of the Day: What to do with leftover veggies

Have you ever made up a great stir-fry or fajita mix and then struggle to eat all the tasty veggies before they go bad? There are other ways to use those great, leftover veggies.

I'm a big fan of vegetables, raw, steamed, and especially sauteed. But if you're like me, there are always way too many vegetables left over after dinner, and my fridge often has at least one container full of zucchini, onions, or some other tasty veggie.

But you don't have to throw them out, nor do you have to eat the same exact meal every day until they're gone. Try one of the ideas below, and be sure to add your own tips in the comments.
  • My favorite use for leftover veggies is -- creamy salad dressing. Take those nicely limp peppers, zucchini, onion, etc, pour on some oil, vinegar, and spices and them shred that up with an immersion blender. It's a great way to get creamy, more rich-tasting dressings without cream, and it's a snap to make.
  • Omelets. They're a great way to use up old veggies. Just chop them up, throw them in the center of your omelet, add a little cheese, and you'll have a gourmet omelet in no time at all.
  • Sandwiches. We often use roasted red peppers on sandwiches, so why not sauteed veggie leftovers? Pile them onto your sandwich for a nice flavor twist.
  • Veggie appetizers. Take some phyllo, or puff pastry, and wrap up some quick bites with the leftover vegetables and cheese as the tasting innards.
