I thought uncooked hams were called pigs or pork. Aren't dead pigs called pork? I've got a lot to learn. And how do turkeys and chickens become hams? What a country!

8-12-2008 @6:00PM Tho's. said... Ham is the cut of meat from pork. Dead pigs. Not Soy, Turkeys nor Chickens. It comes from the back part of butt or thigh. That clear things up? Basically?

The pictures are lousy--they are clearly taken from pre sliced packages from Applegate Farms and chopped, pre-formed Wellshire Farms ham products--hardly the best examples of traditional cuts of cured/uncured meats. Hell, you can see the ridges in the slices from being squashed up against its neighbors in the package. Yuck.

At least there are a couple of photos of salumi from Fra'mani (the Gentile and the Nostrano.) That stuff rocks.

but its an italian deli, so forgive me for not not knowing about that luncheon loaf stuff. or being able to identify different bolognas in a picture.

8-19-2008 @11:25PM Sharon said... After going to deli's countless times throughout my life I guess my 15/20 score was satisfactory. It should have been 18/20. I probably have only eaten one quarter of them, but seeing them all the time you get to know what is what.
