9I'm not too good on American "fake and inexpensive, luncheon meats," including different hams. I thought all American hams were cooked. I thought uncooked hams were called pigs or pork. Aren't dead pigs called pork? I've got a lot to learn. And how do turkeys and chickens become hams? What a country!
15The pictures are lousy--they are clearly taken from pre sliced packages from Applegate Farms and chopped, pre-formed Wellshire Farms ham products--hardly the best examples of traditional cuts of cured/uncured meats. Hell, you can see the ridges in the slices from being squashed up against its neighbors in the package. Yuck.
At least there are a couple of photos of salumi from Fra'mani (the Gentile and the Nostrano.) That stuff rocks.
