Foodie Flicks: Pancakes with a Twist

I'm pretty infamous for my pancakes, or moreover, the look that pops up on my face when friends use Bisquick. It's so easy to make your own, or make your own instant, that buying a box just seems silly. (I'll post my favorite instant recipe this week.) But if you like to spend the time and make your own from scratch, you've got to check out the pancake recipe in the show above. Tomatza starts off with a run-of-the-mill homemade pancake recipes and adds meringue to improve the texture.

8-04-2008 @5:48PM Mad Cow said... Alton Brown's Sweet Potato Waffles uses the same technique to lighten the batter. It would be interesting with pancakes...although I really prefer waffles.

8-05-2008 @12:33AM Ed T said... Or you could just use a high quality baking mix. Bisquik is dreck, but I've found that pancakes made with Pioneer brand buttermilk baking mix are as good as any "homemade" recipe I've ever tried.

8-05-2008 @6:45AM Szilvia said... Actually this technique is very old and popular in the easern european and russian part of the world. They're called Blini's or Blintz (they have more than one name)and are usually smaller in size.

The whisped eggwhites does give a fluffier texture to the pancake and is quite delicate!

(even though what we do is "make pancake mix")
One of the reasons that we started our company was that we were tired of seeing the stuff that passes as a pancake mix.
Even though all of our mixes are "Just Add Water", we suggest that if you want to make great crepes then by all means whip up some egg whites and fold them in.
