
During the summer months, the fresh fruit is so sweet and delicious that needs very little in order to elevate it into the realm of something very special. For the 4th of July, Allen at Eating Out Loud took ripe peaches, halved them, stuffed them with an amaretti cookie mixture and baked them. Prep time is minimal (if you can, get freestone peaches for desserts like this, they make the halving of the fruit far easier) and the result is something akin to a cobbler, but with far less (and calories).
