Dinner sandwiches and a bonus tip

Last Thursday, I came home from work with absolutely no plan as to what to make for dinner. Most nights I have at least a semblance of a plan, whether it be 1). Eat leftovers from weekend cooking, 2). Turkey burgers and salad or 3). Gather the boyfriend and go out. There weren't any leftovers, nothing was defrosted and Scott was working late, which ruled out option three.

Taking stock of the fridge, my eyes hit upon the teeny farmers market eggs I had picked up the previous weekend. Egg salad it would be, made with finely chopped green pepper (I was out of celery and needed something for crunch), grated onion and a tiny bit of fresh dill. After the eggs finished cooking and were cooling down, my eyes found the pastry blender resting in the dish drainer. Normally I'll just chop the heck out of the peeled eggs on my cutting board and then scrape them into the bowl, but this time inspiration (and a bit of laziness) led me to use the pastry blender instead. It worked perfectly, created less mess and gave a nice variable texture to the eggs.

I ate some of the salad open-face on a piece of toasted whole grain bread, sliced tomatoes standing in for the second piece bread. It was a quick dinner that was fresh tasting and left the kitchen cool and not too messed.

My fave go-to dinner sandwich, especially during the summer, is to chop and mix garden fresh cukes, tomatoes and onions and then toss them in white wine vinegar and a little light mayo. While that marinates for a second, I spread fresh tuna on dry whole wheat toast, then spread the veggie mix over the tuna, letting the marinade serve as a sort of dressing. Eat open-faced so you can have two or three....

7-29-2008 @10:47AM Sally said... My go-to sandwich depends somewhat on the contents of the pantry and the frig as well as what bread I have available. Most times it's:
1. Grilled Cheese
2. Tuna Salad
3. Egg salad (oh, I use the egg slicer to cut the eggs both ways and then mash them more in the bowl.)

In the summer, the go-to could be a BLT or a BLAT (with avocado) or just tomatoes.

Also made me think of a Mediterranean variation with hummus, tzatziki,feta and all the veggies. Maybe on a bagel, maybe in a pita. I'm getting bagels today. Yum.

My go to dinner sandwich is a Whole Wheat tortilla, with some refried beans, 1 scoop of jasmine rice, a small handful of spring mix salad greens, and finally a sausage link (aim for turkey sausage), and a sprinkle of nutritional yeast (lactose intolerant). The tortilla keeps the mess to a minimum.

And some days you can't go wrong with an open face peanut butter and apple sandwich.

7-29-2008 @1:47PM Amy said... In the summer, when the tomatoes are at their peak, it's a BLT. It's a go to sandwhich for any time of day - breakfast, lunch or dinner. I just love tomatoes. Sometimes I'll just have a tomato sandwhich.

Otherwise, it's open faced tuna melts. I toast the bread* first, then add the tuna salad and top with slice of cheese. I put it in the toaster oven and heat until warmed through and the cheese has melted. Then I top with a slice of tomato. Yum.

*I actually prefer using an English muffin, but any good bread will do.

7-29-2008 @2:45PM Eric said... I always use my potato ricer to make egg salad. I use the die with the biggest holes and squish them suckers right in there.

7-29-2008 @10:35PM RJ said... Triple Decker Peanut Butter & Jelly, Crunchy Peanut Butter, either Strawberry or Grape Jelly, hopefully on some kind of hearty wheat. Add a glass of milk and maybe an apple or a pear or an orange and that's the most basic meal I think humans can survive on...

8-05-2008 @2:04PM Jilly said... I love a bean sandwich -- yes I said bean and I mean canned beans in tomato sauce. I put them on toasted whole grain bread with thinly sliced onion and maybe, if I'm lucky, a slice of processed swiss cheese and some salt and pepper. A guilty pleasure that I will deny eating in polite company. Even better if you have homemade baked beans, but that's pretty rare.
