I'm not married, so I spend a lot of time thinking about my wedding cake-to-be. I often thumb through Martha's book on wedding cakes on the floor of Barnes & Noble, and I can't pass a window full of them without gazing longingly. They're just so beautiful.In all of this fantasizing, it's never occurred to me to think about having a cake made out of something other than cake. Like, for example, cheese. But apparently cheese cakes are becoming trendy in countries like New Zealand -- layers and layers of gorgeous, decorated cheese. Has anyone ever actually witnessed or tasted one of these? Would you consider having one?

I wanted an ice cream cake for our tiny wedding, but no one does that here. Pity, don't you think?

Given the fact that an abiding love of cheese is ever-present in our home, I think the tower of beautiful cheeses would make a fine stand-in for cake (which neither of us are rabid fans of anyway). What fun to do the tastings for that decision! And no greasy schmear of icing across each other's faces - always disliked that 'tradition'.

Cheese just sounds so heavy. Ice Cream Cake sounds great BTW.

7-13-2008 @10:48PM BS said... I know it's still a cake but one of the only cakes I can stand to eat is the chocolate carrot cake from one of the local bakeries. I also really like one of their English toffee fillings so we had a three-tier chocolate carrot cake with toffee filling for our wedding. The guests LOVED it and I was surprised at how many of them didn't dare to have something they actually WANTED at their weddings because it wasn't "traditional"... I say go different and good luck!

7-17-2008 @10:42PM Erica said... We got married in 1974 and our wedding cake was indeed made of Wisconsin (the groom's state) cheese wheels in a three tier design. It was decorated with ivy and had a tiny picture of the two of at the top. We also had apples from NC (where we were living) and New York (the bride's state) champagne. Our friends made all kinds of different breads to complete the spread.

I'm a cheesemaker, and while we haven't delved into the art of cheese cakes (yet), we do offer personalized versions of our cheese that we soak in wine, beer or champagne that is significant to the couple...say, their favorite wine, or the champagne they shared when he proposed. We've yet to see them stacked together to form a cake - normally they're offered on the apps table - but it's still fun to see something so personalized on their special day! :)
