
It's summertime, which means that gardens are producing an abundance of veggies and fruit trees are dripping with peaches, plums, nectarines and apricots. So much of this harvest is fleeting and so one way to keep all that delicious fruit for the cold, dark days of winter is to freeze it or make jam.
The problem is that peeling all that fruit is something of a challenge if you're doing it by hand with nothing more than your tender fingers and a paring knife. However, all you have to do to loosen those peels is to bring a large pot of water to a boil. When it's rolling, drop in a bunch of your fruit. Let them swim for about a minute and then transfer them to a cold water bath (filling your kitchen sink up is a good way to go if you're dealing with a lot of fruit). Now, a quick little rub should have those skins falling away and you're fruit will be ready to chop up for jam or sliced and laid out on a baking sheet for freezing.
