
After typing a post about a wasabi popsicle, I started to think about other spice and and ice combinations. Naturally, I thought of cardamom, one of my favorite spices. A friend of mine recently suggested that we make cardamom ice cream. Unlike wasabi, cardamom is widely used in both savory and sweet dishes, such as rice and pastries. Its deeply aromatic qualities have always attracted me. And now, I'm dying with curiosity to find out its potential with ice cream.

While in California I tried a Vanilla ice cream that was made with orange blossom water, honey, cardamom and almonds. It was absolutely delicious, I wish I knew how to describe it. The only thing I can think of is it was slightly reminiscent in taste of authentic greek baklava and even that comparison does not do it justice.

Our local grocery store carries some local made gourmet Gelato and ice creams and one of the ones they carry is Cardamom. It had a much more intense flavor then I expected and although good is not something you would eat a full serving of. It went better as an accent ice-cream. We ended up serving a huge scoop of their dark chocolate gelato and little scoop of cardamom.
When I get beck to the house I tell you what brand.

I greatly enjoyed a cardamom kulfi while wandering around Jackson Heights one afternoon. Kulfi can be so heavily creamy, but the cardamom reins that in and offers a light, warm spice without too much fire or any extra sweetness. Indian food on a stick -- what's not to love?
I bet a rosewater sorbet would be gangbusters. I'll try making one this weekend.

Interesting. Once I get an ice cream maker (after I get a bigger freezer), I'll have to try that combination. After, of course, anise with black pepper.

My father owns an Indian restaurant and they make their own Kulfi thats flavored with Cardamom and pistachios. Excellent combination and excellent flavor...My mother would also make a milky pudding type indian dessert called Paisam (think rice pudding but with vermicelli instead), it was mainl a birthday treat but i remember Cardamom was a big flavor component in that and although it is typically served warm or room temp. i know many people who prefer it cold :-) You know what i think would taste amazing a masala chai ice cream, (of course flavored with cardamom)mmmm....

True ice cream lovers should make the pilgrimage to Columbus, Ohio, at least once in their lifetimes to visit Jeni's Ice Cream. Among Jeni's absurdly creative flavors (there is a real Jeni) is a lime cardamom yogurt that'll knock your socks off.

1. A delicious combination of not-too-sweet and spicy/savory
2. Mostly gone
