
Watermelon salad with mint and feta cheese was one of those things that I wanted to hate when I first heard about it five or six years ago. I couldn't imagine that the saltiness of feta cheese would go well the watery sweetness of watermelon. However, with so many things in life, as soon as I gave it a try, I was proven happily wrong. It's a magical combination and one that you should try out if you haven't yet had a chance.

there was a post like this last summer, but the recipe was much more interesting
the addition of red onion, and some lime juice for a light dressing, really helps bring the flavors together!!
i've made this plenty of times and its always good!

This salad contains watermelons and feta cheese which are two of my favorite things to eat =) I will definitely be preparing this salad. As a matter of fact, I'm making it tonight minus the mint ingredient. I hate tasting mint in my food.

Oh, feta sis an interesting addition! My standby is watermelon, lime and mint. Make it a day ahead so it can steep a bit. Always gets raves!

I found the following in my files today. I have no idea where I found it:
Peppery Greens with Watermelon
1 cup watermelon in 1-inch cubes
2 ounces firm feta cheese in 1/2-inch cubes
2 Tbs. balsamic vinegar
1/2 tsp. freshly grated black pepper or to taste
1 Tb. extra-virgin olive oil
2 cups arugulaor gourmet mixed greens
Salt to taste
2 Tbs. chopped toasted almonds
In a medium bowl, put watermelon, cheese, vinegar and pepper. Marinate in the refrigerator for 15 minutes.
Add olive oil, salad greens and salt; toss. Serve, sprinkled with nuts.
Serves 2

I'm surprised you wanted to hate it when you first heard about this salad. I think it sounds fabulous. My first thought on seeing the photo was "OMG, that looks so good!" I think I'll try it this weekend.

I first heard about this salad 5-6 years ago when I worked for a little veggie restaurant. The owner wanted me to come up w/something like his aunt use to make. I have to say a first I was pretty unsure why anyone would want to eat this. But once we figured out the right proportions it quickly became a favorite of the customers. We added red onion and basil instead of mint. It really is pretty tasty.
