Coleslaw please, hold the mayo

lemon coleslawI've been meaning for a while to write about healthy alternatives to the usual summer barbecue foods. My family hosted a desserts-only BBQ for this weekend (which turned into burgers and dogs BBQ), and I feel like I've been doing the circuit of barbecues featuring heavy slaws, burgers with lots of toppings, and rich chocolate chip cookies. While I love these foods as much as anyone, I'm trying to put together a list of the best alternative recipes from across the web to replace these often less-healthy favorites. Here's what I have:

My all time favorite lemon coleslaw from Epicurious.

Citrus-spiked jicama and carrot slaw
from Cooking Light.

Smitten Kitchen's
black bean confetti salad.

Mark Bittman's Leek Salad on Bitten.

Raw beet salad
from stonesoup.

Rhubarb soda from Culinate. Okay, not a healthy alternative, but beautiful nonetheless.

Charred corn salad from Williams Sonoma.

Feel free to add your favorite healthy summer salads and slaws, barbecued goodies and summer desserts!

6-10-2008 @3:59PM Shannon said... Here's an amazing coleslaw recipe (I use pre-packaged broccoli slaw) that has no mayo or sour cream whatsoever. I am addicted to it.

6-18-2008 @9:11AM Kate said... I really enjoy fresh strawberries with steak. Seriously. Grill up a nice, juicy steak to rare/med. rare and top with a huge helping of sliced, fresh strawberries. (No sugar!)

Mmmmm... Served with a spinach salad, this is heaven on a plate.

1 cup each finely chopped green and purple cabbage
1 cup grated carrots
1 green apple, diced
2-3 scallions, sliced thin
2 tbsp. toasted sesame seeds

Combine all ingredients and coat with Sesame Maple dressing. Marinate for 45 minutes or overnight in the refrigerator. Garnish with toasted sesame seeds.

Sesame Maple Dressing

2 tbsp. toasted sesame oil.
1 tbsp. maple syrup
Juice of 1 lemon
1/2 tbsp. ginger juice (grate ginger and squeeze to obtain juice)
2 tbsp. shoyu or tamari

Combine all ingredients.

Half a Cabbage
A large Fennel Bulb
Parmesan
Balsamic Vinegar
Olive Oil

Finely shred and combine the fennel and cabbage

Add as much parmesan as you like

Combine the dressing as one part balsamic to three parts olive oil and dress lightly enough to moisten leaves, but no more.
