Frozen Lemonade Pie

Frozen Lemonade PieIt was extremely hot and humid yesterday. Not only did it reach 88 degrees with high humidity, it was the first truly hot and humid day of the year so it felt even worse. For some bizarre reason I played two hours of tennis in the sun and cooled myself with Tropicana Summer Lemonade (which is quite good, by the way). So I wanted to do a post with a really good lemonade recipe.

Instead of that, I found a recipe at AOL Food for Frozen Lemonade Pie which sounds both filling and refreshing. You make it with a graham cracker crust and a can of frozen lemonade concentrate. The oven will only be on for 7 minutes so it shouldn't get too hot in your kitchen.

(Old Orchard also has a similar recipe for Frozen Lemonade Pie (pictured above), but it includes cream cheese.)

Frozen Lemonade Pie

2 cups graham cracker crumbs
1/4 cup sugar
7 tablespoons butter, melted
1 (14 ounce) can sweetened condensed milk, chilled
1 (12 ounce) container whip topping, thawed
1 (6 fluid ounce) can frozen lemonade concentrate, keep frozen
1 teaspoon candied lemon peel

Preheat oven to 350 degrees F. In medium bowl, combine cracker crumbs, 1/4 cup of sugar, and the melted butter. Press firmly on bottom and up sides of pie plate. Bake for 7 minutes and let cool completely.

In a medium bowl, add chilled sweetened condensed milk and cool whip and fold gently. Add frozen lemonade and continue to gently fold. Do not let the mixture become soupy. Pour mixture into the pie crust and freeze overnight. Garnish with candied lemon peel.

6-09-2008 @1:17PM Megan said... My mother always made this in a casserole dish for Thanksgiving and called it Lemonade Salad. Go figure.

As a pie, it's also good with frozen limeade for a cheaters' Key lime pie.

The Kraft version requires no cooking and tastes very good. I use Country Time Raspberry lemoade mix to add an extra flavor to it.
