Just mix up some olive oil and chopped fresh herbs - basil, tarragon, thyme, mint, parsley, you name it - and add salt and pepper to taste. Slice the chicken and arrange the pieces in a fan shape, then spoon the sauce on top. I imagine that tossing the chicken pieces with the vinaigrette and some fresh lettuce for a nice chicken salad would work just as well.
