Blueberry Salad

Isn't it funny how you eat something a lot as a kid but you drift away from it as an adult? I'm not talking about something sugary and child-like, like certain cereals or candy bars or Yoo-Hoo. I'm talking about staples such as fruit or milk.

Case in point: blueberries! I used to eat these a lot as a kid, not just in cereals but as a snack, finishing off an entire pint while watching The Courtship of Eddie's Father. This is a recipe for Blueberry Salad, from Pixie Collins (via the KVBC site). It's more of a fruit salad than one based in lettuce and tomatoes, and includes cream cheese and walnuts.

Blueberry Salad

1 lg box cherry Jell-O
2 cups hot water
1 cup cold water
1 can blueberry pie filling
1 lg can crushed pineapple

Mix Jello and hot water until Jell-O is dissolved, then add cold water. Stir. Add pie filling and whole can of pineapple with the juice. Mix well. Put in glass cake pan and put in the refrigerator until set.

Topping:

2 lg pkgs cream cheese
1 cup sugar
1 tsp vanilla
Sm pkg crushed walnuts

Mix cream cheese and sugar together until creamy. Add vanilla. Spread the mixture over the
Jello and sprinkle the walnuts over the top. Refrigerate.

6-04-2008 @1:02PM First Time said... More of a fruit salad than a lettuce and tomato salad? Jello is not fruit salad. Yucky. You should mention that its a jello mold in the story. And it's not blueberries... like you mention eating a pint... it's canned blueberry pie filling. I'm wondering if you even read the recipe you attached.

What would be cool is a story on products like the Black Raspberry Jello or Butter Pecan Jello Pudding that are recipe ingredients but are no longer around. I have a recipe for punch that calls for Raspberry Kool-Aid, which is discontinued as well. They used to make a Blastin' Cherry Berry that worked well as a substitute, but I'm having trouble finding that one, too.
