Tip of the Day: Be smart with olive oil

While it's tempting to just buy the largest jug of olive oil possible and keep it in the cabinet for months, there are better ways to deal with purchasing and storing this key ingredient.
olive oilsHere are some quick tips for buying and storing olive oil (many of which you can also find here, thanks to David Lebovitz):

1. Keep two olive oils on hand -- one for cooking and one for drizzling and vinaigrettes. You don't want to waste the good stuff on stir-fries, or use the cheaper stuff when you really want a strong flavor.

2. Pay attention to expiration dates. Contrary to my own popular belief of many years, many olive oils actually expire.

3. Store olive oil away from the heat and the light -- a cabinet works better than out on your kitchen counter.

4. Experiment! As always, you never know what you like until you try it.
