Tip of the Day: make your own marzipan

Knowing how to make your own marzipan is maybe not as useful a household trick as, say, knowing how to remove stains with seltzer water.

marzipan pigsBut when you're stuck on an island with only one grocery store and it's New Year's Eve and you need to make a good luck marzipan pig (welcome to my world), you'll be glad you've learned how.

Just mix a pound of powdered sugar with a pound of ground almonds (use your food processor to grind smooth), two egg whites, 1/2 a teaspoon of vanilla and a teaspoon of lemon juice, and mix into a paste. If it's still to stiff, add a tiny bit of water. If you don't want to use raw eggs, you can try using a little brandy as a moistener instead.

This marzipan site has a few other recipes, if you want to experiment. For more marzipan recipes, a history of marzipan, and a pig-making tutorial, check out this site.
