Breakfast Fried Rice

Breakfast Fried RiceThe name of this recipe immediately brought to mind Chinese food, of course, and I've never thought of fried rice as a particularly breakfast-ish food. But if you think about it, a lot of fried rice has eggs and onion in it, so why not? And this one goes one step further and includes bacon.

The recipe is from Chow, but the picture is from flickr. It's a different recipe (ham instead of bacon and no soy sauce), but I couldn't find a pic of the Chow recipe, which is after the jump.

Breakfast Fried Rice

2 cups cooked rice
5 strips bacon, chopped
3 eggs (also works with egg whites)
1/3 cup soy sauce
3 green onions, chopped finely
Salt and pepper, to taste

Cook rice and set aside.

In a large skillet cook the bacon over medium heat. Once the bacon has browned, drain half the oil and push the bacon to one side of the skillet. On the other half of the skillet, add the 3 eggs and scramble until cooked. Turn the heat down to low. Add the rice until all ingredients are mixed. Add the soy sauce evenly over the rice and mix until the rice takes on a light brown color. Add the chopped green onion. Salt and pepper to taste.

Serve with hot sauce–either Sriracha or Frank's Red Hot.

5-22-2008 @10:03AM Kearns said... Actually, as my Indonesian wife is constantly reminding me, Fried Rice IS breakfast food. The whole point of it is to take the previous night's dinner and reuse it for breakfast. I'm sure her recipe for breakfast fried rice is:

1. Rice
2. Sweet Soy Sauce (Kecap Manis in Indonesian)
3. Last Night's Dinner

Heat up oil in wok. Add ingredients. Stir fry.

I always ask for a large bit of ginger in mine, other good additions are egg, green onions, white onions, garlic, any thing you like in fried rice...

5-22-2008 @11:43AM Dartssnake said... This topic reminds me of my time in Korea. We often had Bokkum Bab (Korean Fried Rice) for breakfast. It comes with a fried egg on top. I make it often here at home for breakfast.

5-22-2008 @8:17PM joe said... For me it was always cooked breakfast sausage, rice, eggs, onion, random peppers, and soy sauce. You use some of the fat from the sausage to fry up the rice. Best breakfast ever.

5-23-2008 @3:52AM kasey said... Wow, that is almost EXACTLY how I make fried rice although I've never bothered to really measure the amount of shoyu I use, that sounds about right. I also tend to add whatever else I have on hand. So sometimes I add spam or Portuguese sausage or even bologna. Sometimes I'll add garlic or oyster sauce or green onions.

Fried Rice is more of an anytime food in my house though. Although it's my favorite for breakfast. :)
