
When I first saw what were called "meatloaf cupcakes," I thought, "How cute - tiny rounds of meatloaf with a dollop of mashed potatoes on top." They were only called cupcakes, though, because they were small and topped with something.
However, Fine Furious Life has made meatloaf cupcakes that really, well, take the cake. The meatloaves really do look like cupcakes (they'd only be slightly better if they were in paper wrappers), and the most impressive part is the mashed potato frosting that really does look like frosting because 1) it's piped into swirls, and 2) there are two colors!
I am amazed.
And who knew that so many other cooks could make an everyday meatloaf look so adorably delicious?

I would do these in the silicone cupcake papers.
Topped with crispy crumbled bacon, and mashed potatoes with roasted garlic, marrow, and white pepper.
Amazing idea for the portion control disabled.
These would make some nice pastry dough wrapped meatloafs too.

So nice to see this is growing in popularity! I've been doing individual meat loaves in my big cupcake tin for years, mostly because I generally cook for just two. I've never done the mashed potatoes on top though, that looks delicious and beautiful. Too bad I don't own a piping bag ...yet. I've just been sticking to the traditional household favourite of ketchup n' brown sugar glaze on top.

All you need is a set of tips, and a heavy duty ziplock. But a decent quality piping bag shouldn't run more than 10 bucks with an assortment of tips.

I think these meatloaf cupcakes are Fab-u-lous. It is giving portion sized servings. Depending on the size you can maybe even do two. It would be great to make veggie cupcakes too. I am going to look at putting together more recipes in cupcake form.
I am a weight counselor and my biggest issue with myself and my clients is portion control. "Cupcakes" are a great solution!
Here are a other few tips that I give out:
Don't let the perfect be the enemy of the good. If you can't be
perfect in your eating don't make the day a wash and start
"tomorrow".
Try to eat something you truly enjoy every day.
Try to eat tomatoes in some form..lycopene is great for all
especially men!
Get a pedometer and try to walk 10,000 steps a day.
If you don't get enough fruits and veggies take a good multi vitamin.
Try to get exercise in when you can. I have read about smartsoles on
many aol boards and they actually work, they increase calories burned

Join a support group to discuss food issues. I have found that good
old fashioned weight watchers truly is the best and not expensive.

And the best thing I did for myself as a single woman is get a pet.
It has reduced stress for me and added to my happiness.
Try not to eat your heaviest meal too late.
Don't hold grudges!
