First off, most recipes call for melting the butter and chocolate together. Make sure this mixture is cool to the touch before you add it to the rest of your ingredients.If it's hard to tell when the brownies are done, here are some things to look for. The middle won't jiggle when you shake the pan, the sides will look hard, there will be cracks in the top and the surface should look glassy. If the brownies are more cake-y then you can do the toothpick test, but that won't work on gooey brownies.
