Peanut Butter Bread

JifI have to admit, I've never heard of Peanut Butter Bread before, but it sounds rather perfect.

I mean, if you're a fan of peanut butter and jelly sandwiches, this might be just the thing to make them with. Just think: you won't have to take the time to spread that messy peanut butter anymore, it's already inside the bread. Just add some jelly and grab a glass of milk and you're good to go (unless you love peanut butter so much you want to add more). I wonder if it makes a difference whether it's creamy or crunchy?


Peanut Butter Bread

2 cups flour
4 tsp. baking powder
1 tsp. salt
1/2 cup white sugar
1 cup milk
2/3 cup Jif peanut butter

Into a bowl sift the flour, baking powder and salt. Add the peanut butter and white sugar--work the ingredients with your fingers. Add the milk--use a spoon to stir, then use your hands to mix the dough. Pour the dough into a greased bread loaf pan. Bake at 420 degrees for 30 minutes. Test with a toothpick for doneness.

5-09-2008 @7:16PM pink_lemonade143 said... Sounds interesting but does the baking powder give it enough lift? Will it be more like a quick bread? I want to see a recipe with yeast...that will make a nice chewy bread.

5-10-2008 @9:33AM Sarah said... I don't know if I would like this in place of PB... I just love the texture of peanut butter.. and how t takes a long time to chew... I love the way it blends with concord grape jelly. I think I'm gonna have a PB & J for lunch now :)
I would probably enjoy a bread like this as toast with butter and jelly.

5-20-2008 @8:12PM Heidi said... Not a bad recipe, but I think it's a little too salty for my taste. Next time I make this, I'll use 1/2 tsp salt and 3/4 cup PB. I baked the batter up into cupcakes and couldn't resist topping them with a dollop of jelly before baking. FYI, I baked them at 400 degrees F for 20 minutes. 420 seemed far too hot knowing my oven. They came out perfectly!
