Feast Your Eyes: Grilled corn

I think I'm starting to feature images from Slashfood Flickr group member Another Pint Please... on something of a weekly basis. Please don't think me biased, I just can't help but be smitten with this really delicious, crisp picture of grilling corn on the cob. Plus, the thought of a batch of grilled corn and black bean salad just sends my salivary glands into overdrive. Yum!

Not me. I head straight for the Corn Man. He has bushels of white corn, he chars them on a grill, brushes them with butter, and hands them to you with the fronds still hanging down, burnt, with a foil handle. I don't have the ability to grill outside, so this simple treat is the highlight of my summer.

I am glad that you were able to put my corn picture to good use. With summer coming, there is only more good grill times ahead!

Chris - The recipe is:

4 ears of grilled corn
4 grilled roma tomatoes.
2 cans of black beans - rinsed (I haven't figured out how to grill those yet)
Sometimes I add in some grilled vidalia or sweet onion too.

For the dressing, take the juice of 3 limes and mix it with 3 tablespoons of olive oil, 1/2 teaspoon of cumin and a little grated lime zest.

Mix it all together and serve!
