I am a big fan of chicken sausage, because it's a one-way ticket to a quick and tasty dinner (in fact, that's what I made last night). Normally I just cook my sausages in a pan on the stove, but there's nothing better than cooking them on the grill and getting those nice char marks. These particular sausages were handmade (and photographed) by Josh at Meatwave. Read more about them here.

They're good roasted, too. I might do this tonight, only combine white and sweet potatoes:

My recipe for bangers and mash using Trader Joes chicken sausage:
Put pot to boil and cook several yukon gold potatoes until tender - remove and dice into large chunks

Heat pot with tablespoon oil.
Add small sliced onion and brown lightly.
Add a few cups hot water.
Add a few tablespoons cider vinegar, a pinch of salt, cumin, italian seasoning, white pepper, salt and brown sugar to taste.
Add sausage links (I use Trader Joe chicken sausage) and simmer for 15 to 20 minutes.

Heat frying pan with a bit of butter and add now diced potatoes. Fry until golden and crispy.

Take liquid from sausage pot, mix a tablespoon cornstarch with a small portion, add back into main mixture, then heat until boiling while stirring now and then. Should thicken like gravy. If too thin, repeat cornstarch.

Steam broccoli and cauliflower in microwave

Make a bed of fried potatoes, place sausage and veggies on top, then slather in gravy.

Takes 30 to 40 minutes from start to end.

I throw chicken sausages into a pan with root veggies and bake 'em: http://iwaruna.com/2006/12/23/chicken-sausages-roasted-with-vegetables/
It's a great one-pot meal, especially during cold weather. :-)
