This is a breakfast, and you can probably guess from the name that it's not the most healthy breakfast you could have. But you know what? It's really not as bad as it sounds. I mean, they have peanut butter, honey, and granola in them.
This recipe for Crunchy Monkey Peanut Butter Banana Sticks is from one of the Rachael Ray shows on Food Network (I know, I know, she's everywhere, but stick with me here). They make for a good breakfast for when you're in a hurry and need something portable, and I think they'd be a great snack for at night when you're watching television.
Crunchy Monkey Peanut Butter Banana Sticks
1/2 cup chunky style peanut butter
2 tablespoons honey, a couple of drizzles
1 cup fancy granola with nuts and raisins
2 large bananas
4 ice cream sticks or chop sticks
Heat the peanut butter in the microwave on high for 20 seconds to loosen it, then stir honey into it. Place the granola into a food processor and lightly process to crush up the granola, nuts, and raisins. Peel and cut each banana in half across the middle. Insert a Popsicle or chop stick into the cut end of each half-banana. Spread 1 side of each banana stick with 1/4 of the peanut sauce then coat liberally with spoonfuls of granola, gently pressing it into the peanut butter. Eat the bananas right off the sticks, but serve on a plate to catch the crumbs.

4-24-2008 @9:48AM Rob O. said... Actually, that doesn't sound unhealthy at all! If you're choosy, you can find granola that offers a good fiber and lower sugar content. You can use "natural" peanut butter that has no added sugar and then you can feel really good about the protein that offers. As crazy as he is over both bananas and peanut butter, I think my li'l monkey would really enjoy this!
