Time again for another concoction from Frank DeCaro's archive of recipes from celebrities of the past and present (and future, I guess). This one comes from Dick Sargent (that is the correct spelling of the name, by the way), who replaced Dick York as Darrin on Bewitched. A lot of people prefer York to Sargent, but I like both of them equally. They both put their own spin on the character.
The recipe for Chinese Chicken Salad. I don't think I've ever had rice sticks and I had deep frying stuff myself, but that's one of the things you have to do to make this.
Dick Sargent's Chinese Chicken Salad
1/4 cup oil
2 to 3 T. vinegar
2 T. sugar
1/2 T. pepper
2 oz. rice sticks
1/2 lb. chicken breast, cooked and shredded
1 small head lettuce, shredded
2 T. chopped toasted almonds or peanuts
2 to 3 T. chopped cilantro
4 green onions, shredded lengthwise
2 T. toasted sesame seeds
Salt and pepper
Combine oil, vinegar, sugar, and pepper, shaking well to mix, and set aside.
Deep fry rice sticks until light brown. Combine chicken, lettuce, almonds, cilantro, green onions, sesame seeds and rice sticks just before serving.Toss with dressing and add salt and pepper to taste. Serves 6 to 8.
