I personally encountered this problem just the other night, while baking a pear and almond tart. I don't bake tarts enough to buy pie weights, but I wanted to bake the crust without having it puff up on me. Time to search for alternatives. According to many kitchen sites, dry beans and rice make excellent makeshift pie weights. Small, clean pebbles also work well, and you can put any of these in tin foil if you'd rather they didn't touch the crust. Be sure to add enough to really weigh the crust down. Not having any of these in my kitchen, however, I used a small metal frying pan that fit in the tart pan perfectly. Obviously, avoid using a pan with plastic or one that will melt, but this turned out great.

Don't you know you don't need weights to bake a pie crust. Just prick the crust with a fork in several places and it will not puff up!!!!!!!!
