Grasshopper Pie

Step One: Go out to your yard and collect 27 medium to full-size grasshoppers.

OK, that's not true. This recipe for Grasshopper Pie is 100% grasshopper-free. It does use 20 Oreo cookies for the crust (and the topping, if you desire), as well as creme de menthe and creme de cocoa. I've seen this made with pistachio pudding mix, but this one has marshmallows.

Grasshopper Pie

20 Oreo cookies (40 halves), fillings discarded, cookies crushed
5 Tbsp butter, melted
3/4 cup hot milk
24 large marshmallows
1/4 cup creme de menthe liqueur
2 tablespoons white creme de cacao
1 cup whipping cream, whipped
A drop or two of green food dye (optional)

Preheat oven to 425°F. In a bowl, mix crushed Oreo cookie halves and butter. Pat into bottom and sides of 10 inch pie dish. Bake in oven for 5 to 10 minutes; remove from oven and cool completely. Once cooled, place in freezer to chill.

In saucepan, melt marshmallows in milk over medium heat. Remove from heat and cool. Add creme de menthe and creme de cacao, and mix well. Add a drop or two of green food dye if desired. Fold in whipped cream. Pour into chilled pie shell. Freeze for 3 or 4 hours.

Serves 8. Serve with a dollop of whipped cream.

3-27-2008 @5:28PM Fran said... I prefer ice cream grasshopper pie. My recipe uses chocolate wafer cookies instead of oreos. I make a batch of vanilla ice cream, then add the creme de menthe and creme de cacao to the ice cream maker once the ice cream is at the soft-serve stage. Process one more minute, and pour into the chilled crust. For added yumminess, coat the bottom of the crust with ganache before the ice cream step, chilling the crust before adding the ice cream. It is also nice to decorate the top with chocolate shavings or something else chocolate and decorative!

3-27-2008 @10:00PM Kristin said... My grandma always made this pie for Christmas. When she died, I took on the project myself. It took me 3 tries (in 3 years) to finally get it right. I cannot overemphasize the importance of COMPLETELY COOLING the melted marshmallow mixture before mixing in the liquors and whipped cream!
