I was one of those kids that actually loved spinach. Mom always served the canned stuff when I was a kid and I couldn't get enough of it. I never understood the cliche that kids hate to eat spinach. Is that really true? And while I'm asking questions, why do green veggies (spinach, green beans, etc) get cold really quickly?

I didn't start eating it until I was introduced to spinach cheese dip and have gradually tried other spinach dishes at the local Greek diner. My 3 year old has not been exposed to overcooked veggie slime yet, and happily eats asparagus, spinach, broccoli, and okra. I think a lot of it is presentation - we've never had a problem with veggies "hiding in plain sight" when we introduced my son to new ones. I usually find recipes that pair a veggie with something my son likes, because he's more willing to try it if he knows he likes part of it already. And once he decides he likes that, he's usually willing to try the veggie solo.

My dad always thought I was weird, "Kids aren't supposed to like vegetables!" I still love it although I don't eat it as much as I used to (I've been very enamored of green beans lately).
