
I so wish that I could remember where I heard this trick, so that I could give proper credit to the genius. I love keeping homemade stock around (who doesn't?), but already have way too many storage containers of leftovers in the freezer. Furthermore, freezing a huge batch of stock together means that the entire container needs to be brought out, defrosted, etc. when maybe all need is quarter cup.
Thus, the tip: figure out how much water each section of your tray holds (maybe mark it on the tray if it isn't marked already), then fill it up with stock. You can put these trays into freezer bags if you like. It will be easy to top out as many cubes as you need to defrost quickly and efficiently.
