South-Western Roasted Bone Marrow and Spicy Parsley Salad P9

Here are the roasted marrow bones right out of the oven. They look Juuuust Riiiiight!

Just make sure that you don't over cook them. These are just on the borderline between done and a wee bit too much, but that's how I like them.
