
In my humble blogger-y opinion, polenta (it's made from dried cornmeal and can be made from scratch or purchased pre-made, often in log form) is a highly unappreciated food. It's pretty simple to make and use, and its mild flavor makes it a natural accompaniment to many recipes.
Hence, why I was thrilled to stumble upon Joe's Three-Cheese Polenta Pie in our Slashfood Flickr group.
In this case, Joe uses the polenta as a thick, hearty shell for his delectable three-cheese pie. The finished product comes out similar to a quiche or a cheesecake, and Joe tops it with a marinara sauce, though you could douse it with just about any hearty sauce (I might even top it with a little basil pesto).

well that looks good in the picture but i have a really hard time eating polenta...i grew up with it only we called it mush...fried mush...not too appetizing....i seem to have a memory of alfalfa inthe little rascals lamenting mush for dinner and me feeling the same way.....my mother, grandmothe and great grandmother called it "blen"....thats polenta with a heavy south philly italian accent.....my mom doesnt like it either...she doesnt like fried brains and eggs and im with her on that one too...its just something fed to us in childhood we just cant abide by now.

An interesting side note: polenta used to be peasant food, back in feudal Europe. Corn meal was easy to get and you could feed tons of people from one batch.
My grandmother makes it the traditional way, everyone having to do some stirring and when it's ready, she pours the polenta on a piece of wood that covers the whole table. Sauce is poured over top and everyone gets a fork. It's a great way to get together as a family.
