Super Bowl Week: My "secret" ingredient makes guacamole less healthy

No, I don't need to give you yet another recipe for guacamole.

Not only are there plenty of them out there, but a recipe for guacamole is like a "recipe" for a bowl of cereal or pasta salad, i.e. it doesn't really require one. It's enough to say that the basics are avocados, garlic, onion, scallions, cilantro, lime juice, salt, and pepper, and sometimes, chopped tomatoes. You mash them together and adjust everything to your taste. I usually leave cilantro out because that vile stuff tastes like dirty soap to me.

Though it tastes and feels like it would be naughty because it's so creamy, guacamole can be considered a "healthy" snack. Guacamole is made of all vegetables, and though people seem to focus on the "fat" part of avocado, the truth is, the fat may be fattening (like any fat), but it's still a "good" fat.

However, I have this thing I do to guacamole that pretty much yanks guacamole off the "healthy" table and hurls it down into the deep fat fryer with things like Buffalo wings with Blue Cheese Dressing and French Onion Dip.

I add a giant -- no, make that enormous -- dollop of sour cream to my guacamole. Not that good, ripe avocados need it, but the full fat sour cream makes guacamole even creamier, and adds a different tang in addition to the lime juice.

2-01-2008 @11:56AM JUDY said... I guess if you want to stretch your Guac out and use less of the expensive avacados you would add sour cream or mayo. But if you cannot afford to make it why make it and butcher it? A head Chef in Las Vegas told me they have 3 different types of Guac you can order. One with the salsa mixed in, tequilla mix or the real Guac with cilantros (with the stems cut off so it isn't bitter, finely chopped green onion, dash of garlic. NO tomatoes ,no sour cream ,no mayo as it only takes away from the avacado flavor and lemon or lime. If you want smooth Guac (which it really isn't supposed to be, use your beater. He said if he ever catches someone sticking in mayo or sour cream he would fire them.
He calls it the Super Bowl Guac keep adding junk to it so it goes further.
That is almost as bad as so much mayo in deviled eggs you can'teven taste the egg or not puting mustard in the yokes or a dash of lowerys seasoning salt, makes them blah. Oh well different strokes for different folks. Myself I like the real stuff without mayo or cream cheese or sour cream and I like it lumpy so you get a nice bite of the avacado. If ya want smooth just open a bottle of rance and pass out the chips lol Be sure to coverit tightly with saran wrap so the air doesn't getin. It is air that turns the avacado brown. The lemonand lime is to give it a tangy flavor.

2-01-2008 @12:11PM betty said... I actually go even futher by adding a tablespoon of miracle whip, when i lived in southern texas a native taught me have to make it real and it doesn't have to have lime juice in it either. Just a thought.

2-01-2008 @12:17PM agray said... I agree - someone who doesn't like cilantro is unqualified to give a recipe for guacamole. However, the lime juice was a wise addition. I like to add orange juice in addition to the lime juice. And you definitely need a jalapeno.

2-01-2008 @12:21PM Judy said... YES! I completely agree, cilantro DOES taste like dirty soap. It ruins all recipes that it is in. I also think that guacamole should be smooth and creamy, not full of chunks of anything else.

2-01-2008 @12:23PM curt said... instead of fresh tomatoes (which unless they're really ripe they have no flavor) use a can of "Rotel Tomatoes". They're chopped tomatoes with jalapenos. They're from South Lousisana but you can find them in most of the chain grocery stores.

Guacamole is avocados, lime juice, salt and a tiny amount of garlic with a splash of some salsa. To get it creamy, use a wisk and some elbow grease or put the mix in the food processor. And, please, only use ripe avocados.

2-01-2008 @12:32PM Nate said... Somehow you must've copied my recipe. Everything but the scallions (I use very finely chopped sweet red onion instead), and i don't use cilantro either. I sometimes throw in a little garlic powder or some roasted garlic that ive mashed up. And all mixed up and creamy with the sour cream, it's the perfect side for any chips you can buy :)

2-01-2008 @1:30PM Arlene said... I add diced tomatoes, green onions, jalepeno peppers, sour cream, lemon juice and salt to taste. I don't like the taste of lime and cilantro is too expensive to add a little bit in my dip. If I am lazy I will subsitute pico de gallo for the tomatoes, green onions and peppers. And I don't puree my avocados, I like it lumpy but not really big pieces.

2-01-2008 @12:31PM Wendy said... Instead of adding bad ingredients to it, all you need to do is use a hand mixer to blend it. Not only does it make it creamy but it really blends all the flavors. If you still want chunks in it then keep a small amount of your ingredients out including a little avocado then use the mixer. Next add the remaining items to add chunks to it after it is mixed. Also I like to chill the guacamole in the fridge and heat up the chips. It is worth it.

2-01-2008 @12:36PM Brandi said... I grew up in Texas and make a mean guacamole. My secret ingredient is cream cheese. Sounds yucky, but everyone has liked it so far. I think I get invited to parties just so I bring the guacamole. :)

Mash Avacodo, add lime, add Miracle Whip, fold this DO NOT WHIP OR STIR, Add Cream Cheese @ ROOM TEMPERATURE, Chunk it up with a manual potatoe masher, salt to taste, VERY LITTLE.
