With all of the Super Bowl foods that a lot of us will be eating - nachos, burgers, chili, chips and dip, chicken wings, etc - can we possibly throw in a hot dog recipe that is actually healthy?
Well, sort of.
This recipe is for Hot Dog Quesadillas, and besides using low-fat hot dogs, you wrap them in whole wheat tortillas and top them with low fat cheese, olive oil, and chili beans. Full recipe after the jump.
Hot Dog Quesadillas
6 low-fat kosher hot dogs
1 Tbsp. olive oil
4 10" whole wheat tortillas (such as Mission Foods)
1 cup chili beans
1/2 cup shredded low-fat cheddar cheese
Slice hot dogs into 1/4" slices. Heat a large nonstick skillet over medium heat. Place hot dogs in skillet and saute until browned, about 5 minutes. Remove hot dogs. Add oil to skilet. Place 1 tortilla in skillet, heating until lightly browned, about 2 minutes. Using tongs, turn tortilla over. Spread about 1/2 cup of hot dog slices over half of the tortilla. Top with 1/4 cup of beans and 2 Tbsp. of cheese. Fold the untopped half of the tortilla over. Cook until cheese is melted and tortilla is lightly browned on the bottom. Slide onto a plate. Repeat with remaining tortillas and toppings. Serves 4.
Per serving: 374 calories, 10.5 g fat (2 g saturated), 25 mg cholesterol, 45 g carbohydrate, 24 g fiber, 25 g protein, 10% calcium, 11% iron

I haven't done hot dogs quesadilla style yet but I have used the tortillas in place of a bun when having them ballpark style with mustard, relish and onions.....delicious!
