Help a Slashfoodie with a vegetarian, gluten-free, and "light" Super Bowl

Friends, we're bringing all kinds of snacks, foods, and desserts to the table for Super Bowl, but let's be real about something. Most of these foods are meaty, carb-y, and definitely go against every New Year's Resolution you made a month ago. Steak chili? Sour cream based dips? Potato chips? Deep-fried everything? Yeah!

But, well, yeah.

Though the Super Bowl may be but one day, and not even an entire day, but an afternoon, some of us do want to stick with healthy options, or have some dietary restrictions, like reader hayduke who left us a comment today asking for suggestions for Super Bowl food ideas with the following guiding principles (we don't like to call them "restrictions"):
  • Sister is vegetarian
  • Sister also eats gluten-free
  • Dad needs to lose 20 pounds, so something "light"
Hayduke has a few things already lined up, but would like some more ideas (as would we!) If you have recipes or ideas to share, leave them in the comments!

1-29-2008 @11:52AM Stephanie said... There is a good low-fat Black Bean dip on epicurious (http://www.epicurious.com/recipes/food/views/14652, although I would add some more spicies). It is good with veges and/or baked corn tortillas:
1. buy corn tortillas (I like the Trader Joes ones)
2. lay flat and spray with a little olive oil (or pam)
3. Sprinkle with salt and chili powder
4. cut into wedges and bake ~ 350 for ~ 10 min or until crisp

That's how I do it, I'm sure there is a "real" receipe for this somewhere.

1-29-2008 @11:54AM Corey said... I'm a vegetarian and have been thinking about making a modified version of these "Scilian Skewers." If you replace the pepperoni with some other vegetable (cherry tomato, mushroom), and go light on the dressing and cheese, you may have something that works.

1-29-2008 @12:37PM Kat K. said... I know that if I've got enough high-octane salsa keeping my tastebuds occupied, I don't think so much about the heavier fare. I'm in too much pain. Delicious pain, but still.

Oh - and roasted eggplants, peppers, etc. with just a kiss of cooking spray totally rock, as does air-popped corn sprinkled with unexpected spices.

1-29-2008 @12:34PM Victoria said... I'm planning to make Slashfood's Really Onion Dip, but substitute low-fat Greek yogurt in place of the mayo, and use low-fat sour cream. I'm also planning to throw some chives into the dip.

Here's something else I recently made for my birthday party. They were a hit, and I think they match all three of your criteria:

Endive leaves stuffed with Roasted Vegetable Cream Cheese
Cut up and lay out your favorite vegetables (I used red peppers, onions, carrots) on a baking sheet and coat lightly with olive oil, salt and pepper. Remove skin from a few garlic cloves and throw in there too. Roast at 400 until they brown--I think mine took about 15-20 minutes. Throw all veggies and garlic into food processor with block of lowfat cream cheese and pulse until it's all combined. Taste here--it may need a little more S&P. It will turn a pretty pinkish color. Fill washed endive leaves with cream cheese and serve!

I also love hummous on veggies.

Soups are easy and delicious.

Check out the blog "Fat Free Vegan" she has a ton of really tasty recipes.

1-29-2008 @1:24PM Chrissy said... I make a vegetarian seven layer dip with meatless ground soy, vegetarian nonfat refried beans, lowfat sour cream, 2% milk cheese, lettuce, black olives and tomatoes! It's really yummy, and people won't know it's low-fat OR meatless unless you tell them.

Also, a crudite platter is easy--with hummus and salsa and gaucamole. Baked chips and salsa is a good one too!

Veggie burgers, veggie dogs, and meatless chili with cornbread are also good options! Baked wings, low fat blue cheese dressing and lots of celery can be options as well!

-lots of salsa with rice crackers or chips (look for them in the "natural" foods section--many that I've found are gluten free)

-slices of red bell pepper, celery sticks, baby carrots, etc. with tofu spinach dip (I use this recipe: http://vegweb.com/index.php?topic=20362.0 However, I leave out the olives and the oil because that's simply my preference. Also, I silken tofu, not firm. The result is very creamy and about 100-150 calories for the WHOLE bowl.)

-bowls of canned artichoke hearts (avoid those marinated in oil), olives, pickles, marinated mushrooms or peppers, and cherry tomatoes with toothpicks for easy grabbing and eating

-grilled veggie kabobs (I like using tomatoes, canned potatoes, zucchini, mushrooms, pearl onions, and canned pineapple chunks on mine)

Good luck...it can be tough, but it's definitely doable!

1-29-2008 @1:33PM Scott said... Sometimes I make a layered Greek-style dip that kind of looks like 7-layer dip, and is always a hit with the family, and decently healthy. Also, pretty! Just take a big platter, spread it with a layer of hummus, add a layer of tzatziki sauce (which I usually make from grated drained cucumber + onion, yoghurt, ginger, cumin, salt, and pepper, but you can buy easily enough), then cover the top with sprinkles of diced tomato, diced black olives, feta cheese chunks, and a little parsley. It's really simple, and a fun presentation, and tastes great dipped into with pita or celery or whatever.

1-29-2008 @3:47PM Numb said... I'm honestly not trying to sound rude here, but Slashfood is already pretty vegetarian (and to a lesser degree vegan) heavy under normal conditions... so this request seems a tad silly to me.

Since your sister will obviously be abstaining from the "traditional" Super Bowl foods, why wouldn't any of the other vegetarian, gluten-free recipes that have been all over Slashfood suffice?

2-01-2008 @9:51AM sgoose61 said... The second recipe here won't help those watching their fat, but I have a similar situation - a veggie and a Celiacs. The last family gathering I successfully made a few good appetizers for both. One was using Manaschevitz split pea soup mix (in a cellophane tube). Add frozen peas and some fresh baby carrots and a whole onion. Leave out in a crock pot with small bowls.

The other was using Trader Joe's gluten free french rolls. They look like fat hamburger buns. I split them in half, lightly toasted them in the oven, spread on a little pesto, chopped tomatoes and sprinkled mozzarella cheese and browned it in the oven. Good luck!

2-01-2008 @12:05PM Britt said... Make spinach dip and use assorted veggies for dipping. When you use low fat sourcream and mayo in the recipe you can't even tell the difference. Buy a bag of the Knorrs dried vegetable mix and follow the directions on the back. Or here is another recipe, it may a little longer to cook but is really great.
