OK, then prove it. ABC's Good Morning America is looking for the best mac 'n cheese recipe in the country. It's the Emeril Lagasse's Best Mac 'N Cheese Ever Challenge. Go to this page and fill out the form and include your recipe. You can add a picture of the completed dish or a video of it being made if you want. Deadline is February 1.
And there's no need to include a "BAM!" anywhere in your recipe.

Well interestingly enough, I made homemade macaroni and cheese last night, for the first time ever. I was always a blue box or a Stouffer's frozen kinda gal. I have a cookbook of famous chef's paying homage to their mothers, and Anthony Bourdain advises that his mother makes the best Mac and Cheese, anytime, anywhere, and he'll fight you after school at the flag pole to back it up. So, with that in mind, I made Mama Bourdain's Mac and Cheese last night.
Meh. I wasn't impressed. It wasn't creamy or well sauced. I liked the crunchy slightly blackened top (intentional), but other than that, it wasn't a repeat experience.

easy to mess up K, bet you had mushy noodles i did tyler florences mac and cheese with a bacon pea and onion topping....turned out spectacular....no need for 40.00 cheese either...the barefoot countessa is a tad full of herself oh and half that gourmet store she shops at...ahem...

My (Irish) mother's version involved cooked macaroni coverd with eggs beaten with milk and flavoured with grated cheese, plus a little dry mustard and Worcester sauce, with more cheese grated on the top. It was baked in the oven and served hot, but is also good cold, cut into slices and eaten with tomatoes. Rather like a quiche with macaroni in it and no pastry crust. It was years before I realised that a proper macaroni cheese has a completely different sauce, and I still like this version better, especially if you use a strong Cheddar.

My own mac and cheese varies every time I make it. It all comes down to what cheese I have in the house. I've even used blue cheese before which is rather interesting.

Here is how I make macaroni and cheese. Cook about a cup and a half of macaroni according to the directions. Drain. Then take about 4 or 5 thick slices of velveeta off the loaf and melt it with about a quarter cup of milk. Add garlic salt and pepper. When it's all melted together add the macaroni. Stir, put it in a dish and serve. It's quick and easy.
