Since I started writing for Slashfood, I've discovered that people seem to just love bacon. Whenver I have a bacon-related post people seem to chime in with words about their love of all things bacon. So I saw this recipe and knew I had to post about it.
This is the classic example of two different foods that I love so I assume that if I put them together into one dish I'm going to love it even more. Of course, this doesn't quite work with other foods that I love, like ice cream and baked beans, but you know what I mean. This comes from the great Cooking For 2 blog.
1/2 pound fresh spinach
3 strips of bacon
1 clove of garlic, minced
2 T balsamic vinegar
Cook bacon in a skillet over medium heat until crispy. Remove meat from pan and crumble.
Drain away most of the fat, then add the garlic and the spinach to the skillet. With the heat still on medium, allow the greenage to wilt. Once that happens, stir in the bacon bits and top with balsamic vinegar.

That actually does sound kind of delicious. I just bought some bacon yesterday (yum!) so I'll have to try this out.

Tropical Smoothie, a smoothie chain here in the south, used to have Popeye's Favorite wrap that was filled with spinach and bacon that was fantastic. I used to enjoy them a couple of years ago when I ate out more. I went back to T.S. recently to get a Popeye's, and they had chenged the ingredients to chicken and spinach. Not sure why, other than I think the Popeye's was the only menu item to feature bacon, so when they switched to chicken that'd be one less thing they'd have to buy and store.

I used to work in a restaurant where we had a brasied cabbage salad...out of this world.
Bacon fat, add shredded red cabbage. Cook until slightly tender, deglaze with balsamic vinegar. Reduce and right before serving, wilt in spinach. Final step was to toss in bacon and goat cheese.
Oh. My. Goodness. *Heaven!*
