A really good brownie is one of the best things in the world, and these Peppermint Cookies 'n Cream Brownies over at BakingBites.com (hello Nicole) prove that without a doubt.
They're chewy brownies made with peppermint-flavored Oreos (or Oreo-ish cookies) and unsweetened chocolate. I think the addition of Oreos give it a dash of something new, and the fact that they are peppermint flavored kick this over into the Christmas category.They're brownies you don't just grab and eat quickly, they're real desserts you sit down and eat at a table, maybe even with a fork. It doesn't happen very often that I see something on a food blog and think, "I must make this NOW". This was one of those occasions. We had an ice storm here in the midwest and I still went out to Trader Joe's to get those peppermint cookies. I have to say it was totally worth it. I promise if you make these that they taste every bit as good as they look.
