I haven't made these in a few years, and I've lost the original recipe I had (I think it might have been on the back of a bag of noodles or possibly a bag of chocolate chips), but I remember that they were surprisingly good, considering it's a cookie whose main ingredient is chow mein noodles.
Declalicious has a recipe that's pretty similar to what I used to do, if I remember correctly. I used to form them into rounder balls than what that site has. The recipe is after the jump, and you can try a variation on the recipe too, by adding nuts or butterscotch bits.
Chocolate Chow Mein Noodle Cookies
12oz bag of semi-sweet chocolate chips
12 oz bag chow mein noodles
1 tbsp butter
Melt chocolate and butter in double boiler. Add in chinese noodles, stir until well mixed. Remove from heat. Drop by large tablespoonfuls onto a cookie sheet covered in wax paper. Refrigerate for at least 1 hour.

Melt in microwave or on stovetop (stirring frequently):
1 package Nestle semisweet chocolate chips
1 package Nestle butterscotch chips
(If using microwave, melt chips in 30 second intervals and stir after each until smooth. Chips will not look melted at all until stirred.)
Add 1 1/2 cups of chow mein noodles and 1 cup of mini-marshmallows. Stir until noodles and marshmallows are covered in chocolate. Drop by spoonfuls on wax paper lined cookie sheet and refridgerate until set.
**It's important to use Nestle brand chocolate and butterscotch chips. I've tried other brands in the past, and none of them melt as smoothly or as evenly as Nestle.

INGREDIENTS:
* 1 cup butterscotch chips
* 1/2 cup peanut butter
* 1/2 cup peanuts
* 2 cups chow mein noodles
PREPARATION:
Microwave the butterscotch chips and peanut butter on 50 percent power for 3 to 5 minutes. Add remaining ingredients and blend to coat noodles thoroughly. Drop by teaspoonfuls onto waxed paper.

My mom used to make these and add mini-masrhmellows and peanut butter. Mmm... So good! I can't wait to start making these this afternoon. Let's hope I don't eat them all before the party this evening! haha
