Leftovers: Wine Cookies

wineWe're big wine drinkers during the holidays. I'll go with a Cabernet Sauvignon before a cocktail or beer. We'll finish off a bottle no problem and then open another one, but there's often a lot left from this second bottle. Sure, we could put the cork back on and/or put it in the fridge, but how about using the leftover wine in a cookie recipe?

This is a recipe for Wine Cookies, or Biscotti al Vino. Basically it sounds like sugar cookies only with a cup of wine of your choice added in. Cheers!

Wine Cookies

1 cup (250 ml) wine of any kind
1 cup (250 ml) vegetable oil
1 cup (220 g) sugar
4 teaspoons baking powder
5 cups (500 g) flour
A pinch of salt
More sugar for rolling the cookies in

Work all the ingredients to gether, until you obtain a dough that's firm but fairly soft, rather like pizza dough. Roll it into snakes that you can shape into rings or S shapes, or into balls that you can flatten with the palm of your hand.
Dredge the cookies in granulated sugar, put them on a lightly greased cookie sheet, and bake them in a 360 F (180 C) oven for 20 minutes. Cool them on a rack, and prepare to be asked for more.

11-20-2007 @8:39PM AJP said... A local wine store sometimes sells wine crackers, both red and white versions. I'm not sure what the recipe is, but the package lists "wine" as the very first ingredient. They are very small - not much larger than a quarter. The texture is kind of like very thick graham crackers. Not soft, chewy, or doughy. They are sweet - not quite dessert sweet, but sweeter than crackers. The white wine ones were seasoned with some cayenne, IIRC. They were very tasty with cheese and tapenade.

11-21-2007 @10:29AM melissa said... Do you actually taste the wine in this? I'm trying to figure out if I can use an old, opened bottle for this like you can in stovetop recipes, or if this is one for fresh wine only...
