My roommate makes yams with marshmallows on top every Thanksgiving, and every Thanksgiving there are always a bag of them left over (really, two bags is too much for one bowl of sweet potatoes). So what can you do with them, besides eating them as a snack, putting them in hot chocolate, or toasting them on a campfire?
You can make Marshmallow Icing for cakes and other desserts. I usually go the canned Duncan Hines route for my frostings and icings, but this one actually seems rather easy.
Marshmallow Icing
1 1/2 cups sugar
1/2 cup water
1/2 pound marshmallow, melted
1 tablespoon butter (sweet)
1/2 teaspoon vanilla extract
Boil sugar and water to 238 degrees F. (To test temperature: After boiling a short time, the syrup when dropped with a spoon into cold water will form a "soft ball" at 238 to 240 degrees F.) Remove from fire and add the melted marshmallow and the butter. Then the vanilla extract. Beat until thick enough to spread on cake.

I wonder why you would bother to melt the marshmallows before adding them. The hot syrup would melt them almost immediately. Here in the South, marshmallow icing is often the icing you see on Red Velvet cake (a red-colored chocolate cake).
