There are lots of resources out there for "healthy" Thanksgiving recipes, and almost every regular food website and cookbooks will have healthy options for recipes, but I am always partial to Mayo Clinic when it comes to health because, well, it's the Mayo Clinic. Also, the Mayo Clinic focuses more oh whole health, rather than other places that only care about your waistline. They've put together a fairly decent list of healthier recipes categorized by course from which you can pick and choose to put together your own menu. Don't go too overboard with decreasing fat, sodium and calories, though. This is Thanksgiving after all, and you're allowed a free pass on this Holiday!
For my menu, I'm considering the Pumpkin Soup made with fat-free milk (instead of heavy cream) for a starter, Seared Endive, and for dessert, Caramelized Pear Bread Pudding.
