
My continuing search for interesting, different and tasty Thanksgiving side dishes has taken me to A Veggie Venture, a food blog written by the very passionate veg evangelist, Alanna Kellogg. Yesterday she posted a recipe for Cauliflower Cream that made me sit up and cast my eyes to my fridge where a lonely cauliflower sits, waiting for a little attention.
This is a great dish, especially if you are looking for ways of incorporating more vegetable and less starch into your Thanksgiving menu. I know that every year my mother tries to come up with ways to reduce the number of bread and potato-based dishes on our table. Most years we revolt and demand that stuffing, mashed potatoes and gingery whipped butternut squash appear. I think I could happily replace our mashed potatoes with this Cauliflower Cream, as I see the spuds mostly as a way of transporting gravy from the plate to my mouth and I do believe this dish could do that just as well as my beloved mashers.

11-11-2007 @12:23AM rlc:tk said... My mother did this towards the end of the whole Atkins trend... I did not even know it wasn't potatoes. So I can attest that this it is very tasty! There are several different ways to make it, some taste more like cauliflower than others... I would recommend to experiment with different recipes and variations.
