
One of the universal facts of modern life is that there never seems to be enough time. Cooking often gets shoved to the side and we find ourselves nuking something frozen, eating yet another turkey sandwich or calling out for something that comes in a flat cardboard box.

Note from Urban Vegan: [10 mins. is hands-on time, not counting time to boil water, cook rice, bake veggies, simmer stews, etc.] Those activities can increase the time from start of dinner til food is actually on the table.

11-06-2007 @10:21AM Liz Petty said... Just last night I was in a hurry rushing from class to meetings and had little time to make dinner. I had some leftover crepes that I had made the other day and frozen for later use, so I took one of those and warmed it in the microwave. I also had some leftover canned pumpkin puree and some asparagus, so I heated up the pumpkin with a little white wine, salt, pepper, basil and parsley in a skillet with some sauteed onions, garlic, roasted red pepper and tomato. When it was bubbling, I added the asparagus and covered it so the asparagus could steam for about 5 or 6 minutes. I wrapped all that up in the crepe and enjoyed a delicious little dinner.

I happened to know a book “The Healthy College Cookbook”. It is really easy to follow. You can make most of the recipes with the things you already have on-hand. And you will save a lot of time if you cook. I found the deal of it:
