
I have a radio in my bathroom that is plugged into an outlet in the light fixture. This means that every time you turn the light on, the radio comes on as well. My friends know this about my apartment and so don't get startled when they go into use my bathroom. However, it tends to freak strangers out. This evening I went in to wash my hands and found myself standing there a full ten minutes later, although I had needed but 30 seconds to finish the task at hand.
The reason I got stuck in the bathroom? This story, playing on NPR's All Things Considered about the Great Harvest Bread Company and the people who own the franchises of the company. The main company encourages their franchises to be creative and innovation in their stores and in turn, the store owners seemed to find great satisfaction in the work that they did. If you have a few minutes, it is definitely worth a listen.

This is probably the fault of the franchisee rather than Great Bread. Our local Bruggers Bagels also undercooks everything.

I've never had a loaf of bread from GHBC that I thought was even the peer of a decent regional bakery with a centralized facility. Doughy, off fermentation flavors, pale crusts.
This isn't just one bad operator - three states, at least six stores. I'd love to support a (truly small) business for my daily loaf, but they need to ride herd on their franchisees. A good way to do that would be to have "product collectors" buy loaves and FedEx them to HQ for moisture/color/sensory evaluation.

10-24-2007 @7:54PM Aaron said... @ Eric, as the head of production at my Great Harvest store, I can tell you that they are required to fedex in a loaf of their bread every few months to the main office, they then grade the bread and give a report. Sadly, some people who get into the great harvest franchise don't really know what they are doing. My store has been nominated for many awards, but I maintain a strict level of quality and hire only the best. It is sad to hear that some of you don't like the bread in your home towns.

I haven't experienced undercooked breads there; rather, a coffee (Double Barrel Dark blend, when they have it) and treat (especially the oatmeal butterscotch scone, again when they have it) start my day off with sublimely.

1-01-2008 @12:59PM Carol Barber said... I recently was given two loaves of Great Harvest Bread for Christmas. They were bought in the Raleigh store and were delicious. One was cranberry orange and the other was Wheat. I wish we had a store in Stuart, Florida.
