Familiar pantry meals

There are certain dishes for which I always have the ingredients in my kitchen. Scrambled eggs (eggs and butter). My sister's Quinoa, Bean-wa, Green-wa (a mash up of quinoa, garbanzo beans, Trader Joe's Curry Simmer Sauce and frozen spinach). Lentil soup (dried split mung beans, carrots, celery and onion). My friend Cindy always keeps around Ramen Noodles and frozen peas for the nights when she can't deal with being creative. Another friend is never without the makings for fluffer nutter sandwiches.

These are the items I can make quickly, with my eyes nearly closed (chopping veggies without at least one eye open is a very bad idea). I know that they will taste good and stop me from being hungry, which is often all I ask from my food.

Okay Slashfoodies, confession time! What are meals you make time and again, and always keep the makings for around in your fridge and pantry?

9-28-2007 @11:24AM Melissa said... My go-to meal is always a bunch of veggies chopped up and cookied in a pan with whatever herbs I feel like, then stuffed into a wholewheat pitta with a slice of cheese. I only ever make this when my boyfriend's not around and I'm feeling both lazy and selfish.

9-28-2007 @11:45AM peggy said... frozen stuff of course (corndogs, hot pockets, pizza and pot pies) but we have the old blue box (kraft), stuff to make tempura or stir fry and rice, lots of rice. lots of mexican spices and salsa, just add meat and veg!

9-28-2007 @11:51AM Michele said... My all time go to dinner is Trader Joes Frozen brown rice, pre marinated tofu and frozen veg. Along with Braggs Amino Liquid, garlic, ginger, veg oil, and sesame oil. All thrown in a skillet and voila, fried rice. :) yummy.

9-28-2007 @12:07PM collier.chin said... Chicken stir fry (I keep bags of chopped chicken, veges and rice in the freezer) and I always have the makings for pizza (frozen dough, canned pizza sauce, vac-sealed pepperoni and frozen cheese)

9-28-2007 @1:01PM aelphaba said... Frozen waffles. Lately its been Trader Joes pumkin butter and maple syrup but there was a lemon curd period for a bit. Also I always have Black Bean and Corn veggie burgers, salsa and sour cream. On bread, chips or alone they are to die for.

9-28-2007 @1:17PM Shopping Jen said... Egg drop Ramen soup. Make a package of chicken Ramen soup per instructions, but with a large pinch of dried parsley added to the water along with the noodles.

While the noodles boil, beat a large egg in a bowl. When the noodles are done cooking, turn off the heat, but leave them in the pot. Stir in the packet of seasoning.

Finally, while the soup is still very hot, drizzle the egg all over the surface, but without stirring the soup at all. You'll get nice threads of cooked egg throughout the soup.

Put in a nice, big bowl or soup mug, and add a trickle of toasted sesame oil on top. Delicious!

And Jen, make the ramen accoding to directions. Drain 3/4 of the water. Add seasoning packet. Put in bowl. Crack egg on top and stir. -Awesome.

1. Salmon salad (canned salmon, mayo, mustard powder or cracked mustard seed, chopped celery and onion)
2. Seaweed salad (dried wakame reconstituted in water, drained, with sugar, vinegar, sesame oil and red pepper, boiled egg on top)
3. Grilled cheese (cheese, mayo, nubby bread)
4. Curry lentil soup (lentils, garlic, ginger, curry powder)

Mmmmmm.

9-28-2007 @2:13PM Janet said... Anything (hamburger, sausages, chicken, beef, whatever) cut up with a few potatoes or yams and an onion, and simmered in Rotel Tomatoes and Chiles. Often with a cinnamon stick and a dash of powdered cloves, plus handful of raisins or dried apricots thrown in at the last minute, for an exotic touch.

9-28-2007 @3:47PM Erica said... Organic turkey sausage with sauteed kale, this chicken recipe, egg drop soup, pot roast in the crock pot, quick vegetarian or turkey chili (ground turkey or Morningstar grounds + Ro*Tel + tomato puree + chili powder + beans + scallion + green pepper).

Pantry food requires a crockpot: Chicken enchilada soup (canned chicken broth, canned enchilada sauce, pre-made tortillas, plus whatever I feel inspired to add); coq au vin with that whole chicken I tend to have in the back of the freezer and some dried mushrooms tossed in; five-cup Chinese chicken; or hawaiian chicken stew with whole eggs still in their shells.

Hmm. I perceive a theme.

9-30-2007 @7:52PM Angie said... I always have everything for quesadillas! (that's the first thing I learned to cook as a child, followed by carne asada and mexican rice)

Tortillas, cheese and ANY toppings I can find (chicken, beef, veggies, heck next year i'll even try and harvest pumpkin blossoms!) Whenever I have only a few minutes to eat, that's the what I end up having.

The other thing I like to make a lot is pollo alla diavola with potatoes on the side....
Chicken, rosemary, crushed chiles, olive oil, salt and lots of pepper. It's great with a piece of home made salt and rosemary focaccia...

10-01-2007 @11:38AM Adriane said... If I'm really having an uninspired night, there is usually a can of soup or a frozen pizza bumming around. In general though I always have on hand chix broth, rice or couscous, eggs, an onion, cheese and some bread. I can generally make something tasty with those as a base; it usually ends up with an omlet and toast. :)

10-01-2007 @6:29PM Luis Antonio said... I usually keep stuff that doesn't need refrigeration, as I don't usually get a chance to eat what's in the fridge anyway :(. So I've got some ramen, fish flakes and dashi powder. Oh yeah, and some bread and cheese :).
