Mmmm...apples. They remind me so much of fall (even though they're available year-round). It hasn't been very fall-like this week in my neck of the woods - it was almost 90 yesterday! - but any recipe that gets me in the mind-set for autumn is something I have to post about.
It's from the Cooking For 2 blog and it's a recipe for Fried Apples. Pretty easy, actually. I'm not really a fan of hot apple pie (I prefer ice cold apple pie), but I'm willing to give this a shot. Full recipe after the jump.
Fried Apples4 medium Granny Smith apples, peeled and chopped
2 T butter
1/4 c brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
Melt butter in a large skillet over medium/low heat. Add the apples, brown sugar, cinnamon and nutmeg and saute for 15 to 20 minutes or until apples are tender.
Serve as a side dish or as a dessert by topping with vanilla ice cream.

I cut a nice Braeburn in eighths, sprinkled it lightly with cinnomon, zapped it for three minutes, and it was delicious. I had half of it with creamcheese in a warm burrito skin with brown sugar, and the other half I ate straight. Excellent both ways.
I looked today for those nice Ginger Gold apples, but couldn't find any; I fear their season may be over. I want to try them with some ginger sugar I bought on Canal Street in NYC last month.

9-27-2007 @5:19PM Hillary said... Hmmm I've never really heard of fried apples. I've had baked apples before which I'd definitely recommend. Interesting though, thanks! Oh and hey, what are your thoughts on apple brownies? (Someone gave us a recipe for them and I can't help but think...yuch.)

9-27-2007 @10:35PM ann lemons said... This is an old country dish. My mother and grandmother used to serve fried apples with pork chops. I use it as a side dish with baked French toast and bacon as an easy company brunch. I slice the apples rather than chop them, and usually employ more than one variety, so there are different textures. (Sometimes one will turn to applesauce; that's okay.) I also leave the peel on one green and one red, just for the color. Season it "by ear"; you may need lemon juice and/or sugar, and you may not need cinnamon, nutmeg or such at all.

9-30-2007 @3:18PM A Viewer said... This sounds tasty. I've never had fried apples, although I have had baked apples, which are wonderful. Hillary, I don't like apple brownies but I know some people who do, so why not try it? That's the only way to know for sure if you'd like it.
