Pudding is one of those foods that I just never think of making. Once in a great while I'll be at the supermarket and down the aisle from the milk are those individual pudding cups and I'll sometimes buy those (maybe once a year), but I haven't made pudding in many years.
Today is National Butterscotch Pudding Day, and just hearing the word "butterscotch" makes me want to taste that flavor all over again. Such a unique taste. Have you had the Butterscotch Budino at Mozza? It is outrageously good. The butterscotch (caramel?) sauce on top is just an iota away from being burned. Perfection.

I wish I had read this a few days ago! Earlier this Summer I took a trip to the Bay Area and had dinner at a place called Pauline's. The dessert chef, who is a friend of a friend, ordered me to try the butterscotch pudding. I scoffed. Butterscotch pudding? Eh.
I swear to you, it was the best, most delicious dessert I've ever had. The chef tells me the eggs make a huge difference - they only use eggs from pasture-raised, organic chickens. That, and there's actually Scotch in it.
