Pudding is one of those foods that I just never think of making. Once in a great while I'll be at the supermarket and down the aisle from the milk are those individual pudding cups and I'll sometimes buy those (maybe once a year), but I haven't made pudding in many years.
Today is National Butterscotch Pudding Day, and just hearing the word "butterscotch" makes me want to taste that flavor all over again. Such a unique taste. Here's a bunch of recipes from cookiemadness.com and Cooks.com, including Butterscotch Pudding, Butterscotch Pudding Cake, Butterscotch Pudding Fudge, and Butterscotch Bread Pudding.

I swear to you, it was the best, most delicious dessert I've ever had. The chef tells me the eggs make a huge difference - they only use eggs from pasture-raised, organic chickens. That, and there's actually Scotch in it.
