Buffalo Wings

To the rest of the world, they may be "Buffalo wings," but to Buffalonians, they're "chicken wings." They are always served with blue cheese dressing on the side, and no one orders just plain old pizza in Buffalo. We go for "pizza and wings." I was born and raised in Buffalo, NY and every Friday night during my childhood, my family ordered just that.

In
Buffalo, on a night in 1964, Teressa Bellissimo served the first batch of chicken wings to her son's hungry friends at the now famous Anchor Bar. These days, the Anchor Bar offers five flavors of wings: hot, medium, mild, spicy barbecue and suicidal, slathered in their famous sauce, which gets its zing from cayenne peppers. The Anchor Bar is the best choice for the traditional Buffalo Chicken Wing. Their reddish-brown wings dipped in thick blue cheese dressing are the ultimate Western New York comfort food.

The barbecue chicken wing is another story. For barbecue chicken wings, I always head to LaNova Pizzeria and Wing Company on the West Side of Buffalo. LaNova has perfected the barbecue chicken wing, served dripping with dark brown sauce. They are as messy as they are delicious.

Fans crave the chicken wings from LaNova and the Anchor Bar so badly that both
restaurants offer overnight delivery to anywhere in the country. (You can order bottled chicken wing sauce too!) If you are going to splurge for the overnight delivery, there is one occasion for which wings are a necessity -- Sunday football games. When crowded around a television set on a freezing cold Sunday in Buffalo, pizza and wings are a must-have. And, please, go ahead and lick your fingers.

My friend's family business, Will Poultry, bottled and developed the official recipe for the Anchor Bar's Sauce about five years ago. She let me in on a little secret -- until recently, there was no branded recipe for chicken wing sauce. The Anchor Bar, and other restaurants, used their own version of an original, unofficial recipe: Frank's Red Hot Sauce and liquid butter.

Don't let anyone feed you this nonsense about the Anchor Bar's wings being so amazing just because that's where the wings originated. It's not like spaghetti only tastes good in Italy or something. La Nova wings aren't anything spectacular either.

Duff's on Orchard Park Road (near Raph Wilson Stadium) serve really good wings, but my personal favorite are from Abbott Pizza on Abbott Road. They're bigger and more crispy.

But seriously, most wings from anywhere in Buffalo are good.

2-12-2008 @2:37AM J said... Yuuummm!!! Buffalo Wings!!! I grew up in the South and lived in Buffalo area for 3 years. And, of course, I visited the Anchor Bar. Their wings were delicious. But you can get good Buffalo wings in a lot of places in that region of the state. In western New York, Buffalo wings are served with blue cheese dressing and celery. Where I grew up, I had only seen them paired with ranch dressing. Let me tell you--blue cheese and celery is much better. Now I'm a purist about my Buffalo wings. Hooter's wings just are NOT Buffalo wings. Yes, they are good, but they are not Buffalo wings.

2-15-2008 @7:18AM Jay said... Perdue makes frozen chicken wings. Zap them in the microwave and you don't have to have any culinary skills whatsoever. More than that, they are cheap and you can eat them at anytime, usually watching your favorite television show. More over, they are not dripping in grease!

2-21-2008 @3:16PM Jim said... I was born in Buffalo, raised in the sticks, and hate to admit, have never eaten Anchor Bar wings. By the mid to late 70's there were pizza and wing joints all over WNY. My favorite is Nino's in West Seneca and Hamburg NY. Got to be crispy not soggy like so many, so called Buffalo wings around the country. Carrot sticks are a nice addition to the celery and Bleu cheese. Here, near Myrtle Beach, I go to Wild Wing Cafe in Garden City.

You need to go to the one in Amherst...honestly, I am not really a fan of the Anchor Bar? I really think people show love to the AB b/c that is where the beloved wing came from...2 other great places in the area for wings are Kellys Korner (yes, with a "K") in North Buffalo (Delaware & Hartwell) and Flatery's in West Seneca (Orchard Park Rd, by Fisher Rd.)

I now live in Columbia, SC The wings in South Carolina are good but do not compare to the wings in Buffalo, NY They are the best and no not compare to any others. The pizza in Buffalo, NY is also better.

My grandparents lived in Buffalo & I spent much time there as a kid. I learned EARLY that "Buffalo Wings" should be SPICY!! You tone down the spice with BLUE CHEESE dressing and celery.

I travel to LaNova's just for their white pizza. Their wings are great though I don't usually order them. Too busy doggin down the pizza. Other favs. are steak and cheese and pepperoni, mushroom and onion. MMMMMMMM. In the early 80s, I lived in Chicago and wings were new then there. You should have seen the sad faces when they asked are they the same? Not even close, I answered. Here in the N.F., Jocco's on Buffalo Ave and Casa Nova on Military Rd. are the best. Think I will call and order some right now!!!!!!!

Over the course of a weekend, I went to Duffs for wings, Ted's for hot dogs, Andersons for Beef on Weck, Luigi's for a fish fry, Bozana's for a pizza (take home) and a few Mighty Tacos! Amazing what you miss when you move away from home!

In the mid 1940s because of our large family, Grandma helped supplement our food supply with the chicken wings the local poultry store was going to throw out because it's basically the scrap of the bird once processed. Now for some reason weird people consider it a delicacy with prices that could match a good steak. The recipe for the same wings you get at the Anchor Bar was the same one my grandmother got from her mother back in Italy. "Duh" You could put the sauce on just about anything cooked the same way and it will taste the same. How funny is that. Don't get me wrong I love my wings but would I rave about Anchor Bar or LaNova's? Not a chance. By the way the original wings came from Asia. As for the best pizza it was from a little Chineaze place down on Henry St. in Brooklyn,NY. It was even better then the original Bocce's Club Pizza. Cook them yourself and enjoy.

3-16-2008 @6:16PM Doug said... Although Buffalo Wings were a big hit in S.C., some years ago (and maybe still are, not sure), I never hear of them anymore. I always get my fried wings from where I order my pizza. I am not a big BBQ loving person, so get the plain, and they are great.
Eight of them for $6.00. Scrumptious!!!!!!!, with the Blue Cheese dressing. I wish Kathy would let us know, or let me know, how the curly fries are made, and seasoned. Thanks.
