Classic Party Dip Recipes
(Note - any of these can be made with lower-fat versions of sour cream, mayonnaise, cheese, etc.)
Spinach Dip
10 oz. frozen chopped spinach
16 oz. sour cream
1 cup mayonnaise
1 packet vegetable soup mix
8 oz. water chestnuts
2-3 scallions
Thaw spinach and squeeze dry in a paper towel. Drain and slice water chestnuts. Chop scallions.
Stir together all ingredients in a large bowl, and chill for at least two hours to allow the flavors to blend.
Serve with chips, pita slices, crackers, or vegetables. For an added touch, hollow out a rounded loaf of bread, spoon the dip into the center, and serve with cubed, scooped-out bread on the side.
French Onion Dip
16 oz. sour cream
1/2 cup mayonnaise
1 packet french onion soup dip
Stir together ingredients, chill until onions soften, and serve.
Easy Cheesy Salsa Dip
1 lb nacho-style cheese
8 oz. jarred salsa
2 tbsp chopped cilantro
Microwave cheese and salsa together in a microwave-safe bowl on High for 2 minutes. Remove from microwave, stir, and return to High for 3 minutes or until cheese is completely melted. Stir in cilantro, and serve hot with tortilla chips.
Pimento Cheese Dip (note - this is the dip version, not the classic spread)
1 lb. sharp cheddar cheese (yellow, white, or a combination)
4 oz jarred pimentos with juice
1/2 cup mayonnaise
Shred the cheese, and stir together with mayonnaise, pimentos and juice until blended. (Note - this will stain a wood or plastic, so use a metal spoon) Season with salt and pepper to taste. Chill, and serve with crackers, celery, or corn chips.
Kentucky Benedictine Dip
1 large cucumber
8 oz. cream cheese, softened
1 small white onion
1/4 tsp salt
1 tbsp mayonnaise
2 tbsp sour cream
Green food coloring (optional)
Peel the cucumber, and either juice it with a citrus juicer, or grate as finely as possible. With either method, reserve the juice and set aside. Follow the same procedure with the onion.
Combine cucumber pulp/shreds, 2 tbsp onion pulp/shred, cream cheese, mayonnaise, sour cream, salt, and optional green food coloring in a bowl or food processor, and blend, adding cucumber juice and onion juice until desired taste, color, and smoothness is achieved.
Serve with crudité, crackers or triangles of cocktail rye.
