Today, it's approximately 2000 degrees outside (around 2100 in my apartment), and I don't feel like turning on my oven or even eating anything hot. I think a salad would hit the spot, and this recipe from Jessica over at AllRecipes sounds interesting (and by interesting I mean "hmmm...I never thought of putting those things in the same salad").
It's the Watermelon Summer Salad, and besides refreshing, cool watermelon, you also get feta cheese, black olives, and sliced red onion. However, Jessica tells us not to be scared by the ingredients,. They work well together. Full recipe after the jump.
Watermelon Summer Salad
3/4 cup halved, thinly sliced red onion
1 tablespoon fresh lime juice
1 1/2 quarts seeded, cubed watermelon
3/4 cup crumbled feta cheese
1/2 cup pitted black olive halves
1 cup chopped fresh mint
2 tablespoons olive oil
Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.
In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all and toss to blend.
The recipe doesn't have anything about putting the salad inside a watermelon bowl as shown in the pic, but that would be a nice touch.

Can someone tell me how many cups are in a quart? I would love to make this salad, but a quart and a half is an amount I wouldn't know how to begin to measure.

A quart is roughly equivalent to a litre, and is 4 cups. But this recipe is really just a guideline - you pretty much just want to cut a watermelon in half, scoop out the flesh and cube it. That should be plenty.
If your friends/family aren't used to strong flavors, you can chuck the olives and cut back on the feta. Adding cilantro is also a nice flavor to this salad.

this sounds so good. i have loved watermelon as a sweet addition to savories for a while. rick bayless has a salad in one of his books that i used as inspriration for a mexican salad: add watermelon jicama, raddish and cucumber and onion. chill with lime juice plate up and sprinkle with chili powder- hot or mild your choice!

lauralemay, I can assure you, Nigella didn't "invent" the watermelon feta salad. My grandmother used to make a watermelon, feta & black olive salad every summer at least 20-25 years ago - and trust me, the only nigella she knew about were nigella seeds.

I just made this and it was absolutely awesome! I can't imagine leaving out one of the ingredients...it just doesn't seem like it would make sense without everything together.
A fantastic excuse to buy a huge watermelon that was on sale for 2 bucks!
