Chocolate Outrageous Pie

As webmaster Lydia herself says, there's no such thing as a perfect pantry, but there are certainly things in there you need. And it's The Perfect Pantry's one-year birthday (well, it was yesterday), and Lydia made a Chocolate Outrageous Pie to celebrate. She found the recipe in a notebook filled with old recipes. Chocolate Outrageous Pie

2 sticks unsalted butter, softened
8 oz cream cheese, at room temperature
2 cups sugar
4 squares unsweetened chocolate, melted and cooled slightly
1 tsp pure vanilla extract or 1/2 tsp mint extract
4 eggs (I use large eggs)
1 baked 9-inch pie crust (I use Pillsbury, baked blind)
Whipped cream and shaved dark chocolate, for garnish (optional)

In the bowl of a Kitchenaid-type stand mixer fitted with the paddle attachment, beat the butter and cream cheese together until fluffy. Slowly add the sugar and beat until mixture is creamy and sugar is dissolved. Add the melted chocolate and vanilla, and blend. Add the eggs, one at a time, beating for 4 minutes after each egg. Pour into baked pie crust and refrigerate 2-3 hours before serving. Garnish with whipped cream and grated chocolate, if desired.

6-15-2007 @12:48PM Michael Sills said... How much is a "square" of chocolate? I buy big blocks at Whole Foods that are sold by weight.
As for the raw egg issue, they are safe for most adults. Young children, elderly and people who are immunocompromised (i.e. chemotherapy or AIDS) should be careful.

A "square" of chocolate is one ounce.

The melted chocolate will not cook the eggs. But as Michael said, they are not an issue for most healthy adults.
